Did you know that sage has the longest history of an herb used both in culinary and medicinal purposes? Sage leaves have long been used to relieve digestive problems such as diarrhoea, bloating, flatulence, gastritis and even loss of appetite. Leaves are also applied on the skin to heal cold sores and the herb’s aroma is inhaled to relieve asthma. But aside from its medicinal benefits, sage also adds a delicious, distinct flavour to food.
Here are some sage recipes you can cook at home:
Sage and Parmesasan Crusted Pork Chops
What you need:
- 2 boneless pork chops
- 1 egg, lightly beaten
- 3/4 cup Italian bread crumbs
- 1/2 cup grated Parmesan cheese
- 2 tablespoons all-purpose flour
- 1 tablespoon butter
- 1 tablespoon olive oil
- 1 1/2 teaspoons rubbed sage
- 1/2 teaspoon grated lemon zest
- 1/4 teaspoon salt
- 1 pinch ground black pepper
In a shallow dish, mix together flour, salt and ground black pepper. In a separate shallow dish, combine bread crumbs, cheese, sage and lemon zest. Press both sides of each pork chop in the flour mixture, dip in the beaten egg then press into bread crumbs. Heat olive oil and butter in a pan and cook pork chops for about 4 minutes per side or until lightly browned. Transfer cooked pork chops in a baking dish. Bake in a pre-heated oven (425 degrees F) for 10 to 15 minutes.
Sweet Potato Sage Bites
What you need:
- 1 egg
- 2 cloves chopped garlic
- 1 cup old-fashioned rolled oats
- 3/4 cup mashed sweet potatoes
- 1/2 cup finely diced onion
- 1 1/2 teaspoons dried sage
- 1/4 teaspoon ground black pepper
- Cooking spray
Spray a small pan with cooking spray and cook garlic and onion until tender, about 5 minutes. In a medium bowl, mix together egg, rolled oats, mashed sweet potatoes, sage and black pepper. Add cooked garlic and onion and stir to combine ingredients well. Roll mixture into balls. Spray a griddle with cooking spray and cook balls over medium heat until browned, about 4 minutes per side.
Fresh Sage on Grilled Turkey
What you need:
- 4 boneless, skinless turkey breast halves
- 28 leaves fresh sage
- 2 lemons, halved
- 5 tablespoons olive oil
- 3 tablespoons fresh lemon juice
- 3 tablespoons unsalted butter
- Sea salt and fresh ground black pepper to taste
In a large bowl, combine sage leaves, 3 tablespoons olive oil and lemon juice. Place turkey breast halves in the bowl and marinate for 1 hour, turning occasionally. When ready, remove turkey from marinade (reserve marinade), sprinkle with sea salt and black pepper then cook on a pre-heated grill until cooked through, about 15 minutes per side. While turkey is on the grill, heat remaining olive oil and butter in a pan then add marinade into the pan. Cook for 15 minutes or until sage leaves are crispy and fried and marinade has evaporated. Place grilled turkey in a serving dish and top with fried sage leaves and lemon halves.
