Filipino cuisine can be described as a melting pot of potent flavors with a combination of Chinese, American, Spanish and various other Asian influences. Virtually every family has somebody who understands how to prepare the local dishes, with some including a few twists and additional ingredients to create popular Filipino recipes using their own signature style.
The style of food preparation as well as the foods related to it has been enhanced over the last decades from its arbitrary roots to a mixture of dishes with a lot of Hispanic, American, Chinese and additional Asian influences added to traditional ingredients and also the local taste buds. Similar to other Asian countries, rice is easily the most popular food throughout the Philippines. It is a common practice for rice to be steamed and served for most meals. In case there is any excess rice, this will often be fried with garlic. This is commonly called sinangag, which is great for breakfast meal with cured meat, sausages and eggs. In certain areas in the Philippines, people will mix rice with salt, coffee, condensed milk or cocoa.
Filipinos have several terms for their cooking styles and some of these include:
Inadobo or Adobo dishes which are primarily cooked in oil, vinegar, soy sauce and garlic. It might also used in reference to roasting on a wok using with salt, garlic and light oil. Probably the most famous type or example of this will be the chicken adobo or adobong manok.
Binagoongan or cooked with Bagoong, which is a fermented fish paste. Bagoong have very strong smells which might be unpleasant to people who are not accustomed to them. However, the bagoong taste pretty good and is great with green mangoes. A well-known dish for this type of cooking is binagoongang baboy.
Guinataan and/or sa Gata Filipinos recipes are generally prepared with coconut milk. Quite often, this contains chili as well. A good example for this type of cooking is the popular Bicol express.
Guisa/Ginisa/Guisado or Gisado are generally dishes sautéed with tomatoes, garlic and onions. This is the most popular and easiest cooking style with vegetable dishes being the most popular.
These are just some of the Filipinos cooking terms. Even though there many different processes and types cooking, the Filipinos have common ways of cooking and will prepare food with heart. This means, all the dishes will be prepared with good quality taste and include the finest ingredients.
