what about this for an idea?
Why place the ice cubes on a tray under the dough or a cup of water in a tray? Why not ice cubes on wire mesh over the dough?
As it melts it’ll wet the top of the dough and make it moist enough to not crust over and it’ll create more steam with moisture also coming from the dough itself.
Under the bread still super heat a metal tray so as the droplets fall and hit it it’ll also produce more steam rather than just a cup of water in a tray.
In other words there’s more moisture going round the oven.
